This coffee is a collaborative effort from farmers in Sandona and Chachauy, Nariño, who use a 24-hour fermentation process on their farms. After fermentation, the beans are sun-dried together, ensuring a consistent, quality flavor in every batch. The beans are then rested in grain pro bags for 125 days before milling to enhance their character. The result is a coffee with notes of almond, caramel, bright citric acidity, and a hint of green tea.
