Colombia Las Palmas is a unique coffee created through an innovative co-fermentation process with dehydrated grapes, enhancing its fruity depth. Starting with a 24-hour pre-fermentation in bags, followed by 24 hours of fermentation in cherry, the beans are then depulped and anaerobically co-fermented for 5 days with dehydrated grapes. This meticulous process includes 10 days of mechanical drying and a final 5-day stabilization, resulting in a coffee with notes of brown spice, caramel, and red grape.
